AT THE WINERY
Grape sorting on a vibrating conveyor belt table. 24-hour skin contact. Classic white vinification in stainless steel tanks at a controlled temperature of 16οC with indigenous yeasts. Lees contact for 3 months.
The long rain just before harvest and its impact on the grapes (shown in our measurements), led us to the decision to add tartaric acid (1gr/lt) in the beginning of the vinification this year. Tartaric is one of the natural acids contained in grapes.
INGREDIENTS: Fresh grapes of Malagousia, tartaric acid (1gr/lt), sulphites (93 mg/lt).
