Elegant and delicate varietal expression. On the nose, notes of white peach and citrus fruit coupled with lemon blosson and a gentle herbal -more like thyme- character. Rich and round palate with bright acidity underlining a youthful, crisp finish.

Note: The challenging weather conditions met during summer 2021 with long heatwaves and heavy rains alternately, together with the frequent invasions by local wild hogs, resulted to a smaller production in terms of volume. Due to that volatile weather in particular, one of the two clones planted in our Malagousia plot demonstrated a slow, heterogenous ripeness; that is why picking the grapes took place in 3 phases.
AT THE WINERY
Grape sorting on a vibrating conveyor belt table. 24-hour skin contact. Classic white vinification in stainless steel tanks at a controlled temperature of 16oC. For this vintage, we applied “pied de cuve” for 20% of the total quantity: we picked a small amount of Malagousia grapes and pressed them in vessels at our vineyard, allowing them to start fermenting right there, taking advantage of the population of native yeasts present.
2021 vintage is the first to embrace our endeavours with indigenous yeasts in all our wines, as well as the first introducing our Organic certification.
