TASTING NOTE
Bright burgundy color. Typical varietal nose with aromas of tomato and olive paste, tagged along by notes of dried violet and sweet spices. Additionally on the palate, the flavors of red cherries, the vibrant acidity and the well-integrated tannins balance the oily mouthfeel. Long aftertaste with a red-fruity finish.

Note: As a late ripening variety, Xinomavro was not affected by the volatile weather met during August and early September of the year; on the contrary, the conditions have assisted the complete phenolic ripeness of the grapes.
AT THE WINERY
Grape sorting on a vibrating conveyor belt table. Pre-fermentation cold maceration for a few days. Fermentation with indigenous yeasts in stainless steel tanks. Maturation for 12 months in a combination of French oak barrels* (2/3 of the quantity) and concrete tulip-shaped vats (1/3). Unfiltered.
* 225Lt, 2nd and 3rd fill, medium toast
